I am used to using Arches 88 and would like to switch to Coventry Rag. My prints are usually around 30" x 40" and have 22 or more color runs. WIll the 320 gsm paper handle more ink and buckle less than the 290 gsm weight?

The general rule is the larger the sheet size the heavier the paper. That said, Coventry Rag has had success for silkscreen printers laying down over 75 colors. The paper, unlike Arches 88 - which has no sizing at all, is both internally & externally sized and very dimensionally stable. It has, over the past 45 years, become the go-to paper for serigraphy.

My recommendation is to go with the 320 gsm. I don't know where you are printing but with all this humidity play it safe by having air circulating in your studio (fans help). If your studio is climate controlled even better.
