I'm looking for 600 gsm letterpress paper that comes in a color like grayish lavender color (pantone: 16-3810). Is this something I could get made or that you might already have?

That's a very specific color. Not sure there's a dead on match, but here are a few suggestions:

Arturo Lavender - available in 260gsm (but you/we can have it laminated to 520gsm)
